Easter right around the corner impresses your friends and family with this delicious recipe for Lemon Bread.
Lemon Bread
1 3/4 cups flours
3/4 cups sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg, beaten
1 cup milk
1/4 cup oil or apple sauce
2 teaspoon finely grated lemon zest, set aside
1 tablespoon lemon
Glaze
2 tablespoon lemon juice
1 tablespoon sugar
Preheat oven to 350 and grease an 8x8x2 inch (or 4 mini) loaf pan.
- In a medium bowl stir together the flour, sugar, baking powder and salt. Make a well in the center and set aside.
- In another bowl combine the milk, egg, oil, and the tablespoon of lemon juice. Add the mixture all at once to the center of dry ingredients. Stir just until combined. BATTER SHOULD BE LUMPY! fold in the lemon zest.
- Gently spoon the drop batter into the prepared pan. Bake in the preheated oven for 50-55 minutes (30 minutes for mini loaf pans.) or until a toothpick inserted in the center becomes clean.
- While the bread is baking prepare the glaze. Using a pastry brush, evenly spread the glaze over the warm bread. Cool completely, wrap and store overnight before serving.
