Cooking With L: December 2022 Edition
As Christmas is around the corner, these Toffee Bar Cookies are the best gift! They are yummy and everyone will enjoy them! This recipe is L’s favorite, it was her grandmothers.
INGREDIENTS:
- 1 cup of butter or margarine, softened
- 1 cup packed lights brown sugar
- 1 egg
- 1 tsp vanilla extract
- 2 cups all purpose flour
- 6 milk chocolate bars
- ½ cup finely chopped walnuts (Mrs.L says that it doesn’t have to be walnuts, it can be any topping. It is highly recommended that there is some sort of topping)
BAKING INSTRUCTIONS:
- Preheat oven to 350
- Beat butter with an electric mixer on medium speed for 30 seconds
- Add brown sugar and beat until fluffy
- Add egg and vanilla, beat well
- Gradually add flour to the beaten mixture until well combined
- Press evenly into an ungreased 15x10x1 inch baking pan
- Bake 15 to 20 minutes until browned
- Immediately remove from the oven and place unwrapped chocolate bars on top. Let stand until the chocolate melts. Spread evenly with a spatula (coat the entire top). Sprinkle with crushed walnuts and let cookies cool. When chocolate has hardened, cut the bars into 1 inch squares.
This recipe yields 48 cookies
