Cooking with L: May Edition

This vegetable fried rice is quick and simple to make and a yummy treat! You can eat it with anything or just by itself.  

Ingredients:

  • 1 ½ cup instant rice 
  • 1 ½ cups of water
  • 2 cloves of garlic (minced) 
  • 1 green onion (sliced)
  • 1 carrot (shredded)
  • 1 cup of a variety of chopped vegetables (broccoli, spinach, peas, zucchini, etc.) 
  • 1-2 eggs
  • Olive oil 
  • Soy sauce 

Instructions:

  1. Stir the rice and water in a large microwave bowl. Cook for 8 minutes in the microwave. The bowl will be hot! 
  2. While the rice is cooking. Being chopping the veggies.
  3. Heat the sauté pan on a medium-high heat. Drizzle olive oil in the pan. Sauté garlic and prepare vegetables until cooked. Push vegetables out to the side of the pan and crack the eggs in the center. With a turner, scramble the eggs. Once cooked add rice and stir in vegetables. 
  4. Pour soy sauce into rice (add a small amount of soy sauce at a time). Stir and heat through. Season with salt and pepper for taste. 

Tips: 

Fried rice is a great way to use up any leftovers you have.

You can use fresh or frozen veggies. 

If you want to add a protein that is raw, cook it first. If the protein is cooked add after the egg, this way it will be heated without overcooking.
